My sister and I grew up eating salsa all the time. We would figure out which local Mexican restaurants had good salsa and we would buy it by the pint. Once I had finished college I began experimenting to see if I could make my own salsa and over time I concocted a pretty good recipe. I'd make it for myself and my friends to enjoy and figured I would keep on doing just that. I even converted my girlfriend into a being a salsa aficienado. Fast forward a few years....I married my then girlfriend Jenny and we had a little girl named Grace. Grace had a difficult first 2 years and we gradually learned that Grace had some serious neurological issues. Grace has been a student at Gateway School in Greensboro since she was almost 2 years old. Each March many of the parents, faculty, and staff from Gateway walk or run in The Human Race, a citywide fundraiser, to raise money for the school and their special needs students. In 2004, Jenny and I, along with Grace joined the team. I offered to many of my business contacts a jar of my "homemade salsa" for any donations of $10 or more. Thanks to many supportive contributors, Grace raised a lot of money for her school....and Daddy had to make about 80 jars of salsa, by far the most I'd ever made at one time. After trying the salsa people wanted to know how they could get more salsa and asked if they could buy it.....and that's how it all got kick started. We decided to name the salsa "Carolina Sunshine" after our little ray of sunshine Grace. Grace is doing well and will turn 6 in April. We thank you for your support!
